These are the phases I go through while baking.
Phase 1. I find myself looking for a new recipe. “Oh, that looks nice . . . wow, tons of good reviews, must be a perfect recipe! I’ll take that one!”
Phase 2. “I should just follow the recipe this time. Remember what happened when you didn’t follow the recipe for those cookies last week? Yep, you ended up throwing those away.” 🙂 I make a personal goal to follow the recipe exactly.
Phase 3. “Wow, that has a lot of oil in it.” I immediately start looking for the best substitutes for all ingredients besides the baking powder (unless, of course, I don’t have baking powder in the cupboard)….”Goal? What goal?”
Who else is notorious for not following a recipe? My husband is always asking me to use a “normal” recipe. 🙂 Most of the time these things work (trust me, lots of trial and error), but sometimes it is just awful. Like those black bean brownies a couple years back I tried making. Even the dog wouldn’t eat them….
This gluten, oil, and sugar free banana oat bread is the proud winner of many a trial and errors. It is moist, flavorful, and so healthy!! I love to make muffins out of this recipe if I want a faster baking time.
